Ingredients

  • ½ cup butter, softened
  • 1 teaspoon vanilla extract
  • ¼ cup egg substitute
  • ½ teaspoon salt
  • Cooking spray
  • 1/3 cup packed brown sugar
  • 1/3 cup maple syrup
  • + 8 more ingredients
    • 2 ½ cups all-purpose flour
    • Filling:
    • ¾ cup granulated sugar
    • ½ teaspoon pumpkin pie spice
    • 1 teaspoon baking soda
    • 1 cup canned pumpkin puree
    • Cookies:
    • 1 quart fat-free vanilla ice cream

Preheat oven to 350°. To prepare cookies, lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking soda, salt, and pie spice, stirring with a whisk.
