  • 4 eggs
  • 1-2/3 cups sugar
  • 1 cup canola oil
  • 1 can (15 ounces) solid-pack pumpkin
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder

    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • ICING:
    • 1 package (3 ounces) cream cheese, softened
    • 2 cups confectioners' sugar
    • ¼ cup butter, softened
    • 1 teaspoon vanilla extract
    • 1 to 2 tablespoons milk

1. In a bowl, beat eggs, sugar, oil and pumpkin. Combine flour, cinnamon, baking powder, baking soda and salt; gradually add to pumpkin mixture and mix well.
