Pumpkin Caramel Ice Cream Pie

Ingredients

  • 1 ½ cups plus 2 tbsp. sugar
  • ¾ cup whipping cream
  • 1 ¼ cups graham cracker crumbs
  • ¼ cup butter, melted
  • 2 cartons (14 oz. each) vanilla ice cream
  • 1 cup pumpkin purée, homemade or canned
  • ¼ teaspoon ground nutmeg
  • + 3 more ingredients
    • ¼ teaspoon ground allspice
    • 1 teaspoon ground cinnamon
    • About 1 tbsp. toasted pumpkin seeds (optional)

1. Preheat oven to 350°. Mix 1 1/2 cups sugar and 1 cup water in a medium saucepan.
