Ingredients

  • 1 (14-ounce) can fat-free sweetened condensed milk
  • ¼ cup chopped peanut brittle
  • 2 teaspoons vanilla extract
  • 1/8 teaspoon salt
  • Cooking spray
  • 1 (15-ounce) can pumpkin
  • 4 large eggs

    • 1 teaspoon pumpkin-pie spice

Preheat oven to 325°. Place first 6 ingredients in a blender; process just until smooth. Pour custard mixture evenly into 6 (6-ounce) ramekins or custard cups coated with cooking spray.
