  • 1 cup yellow cornmeal
  • 1 cup canned pumpkin
  • 2/3 cup firmly packed brown sugar
  • 2 teaspoons baking soda
  • 1 cup dates, chopped and pitted
  • 1 cup milk
  • ½ teaspoon salt
  • + 5 more ingredients
    • 2 eggs, beaten
    • 2 cups all-purpose flour
    • 2 teaspoons baking powder
    • ¼ cup canola oil
    • 1 teaspoon ground cinnamon

Heat oven to 350° F. Lightly coat a 5-by-9-inch loaf pan with vegetable cooking spray. Combine the flour, cornmeal, sugar, baking powder, baking soda, cinnamon, and salt in a large bowl.
