    • 2/3 cup sugar
    • ½ teaspoon vanilla extract
    • ¼ cup sugar
    • 1 ½ cups vanilla soy milk
    • 2 large eggs
    • 2 large egg whites
    • ½ teaspoon ground nutmeg
    • ½ teaspoon vanilla extract
    • ¼ teaspoon salt
    • ½ teaspoon ground nutmeg
    • 2/3 cup sugar
    • Praline:
    • 1 ½ teaspoons ground cinnamon
    • 1 ½ cups vanilla soy milk
    • ¼ cup chopped pecans
    • Custards:
    • ¼ teaspoon salt
    • ¼ cup sugar

Preheat oven to 325°. To prepare the custards, combine first 9 ingredients in a bowl; stir well with a whisk.
