Pumpkin Salad Recipe

Ingredients

  • 2 tablespoons finely chopped pecans
  • 2 tablespoons sunflower kernels
  • ¼ teaspoon salt
  • 2 teaspoons canola oil
  • 1-¾ cups cubed peeled pie pumpkin
  • 1 teaspoon ground cumin
  • ½ cup plain yogurt
  • + 3 more ingredients
    • 2 tablespoons chopped red onion
    • 2 tablespoons minced fresh cilantro
    • ½ teaspoon grated fresh gingerroot

1. Place pumpkin cubes on a baking sheet. Brush with oil; sprinkle with salt. Bake at 375° for 35-40 minutes or until tender. Cool completely. 2.
