Pumpkin Sandwich Cookies (Scooter Pies)

Ingredients

• ¹/₃ c oil
• ½ c brown sugar
• 1 c sorghum
• 1 whole egg
• ½ c canned pumpkin
• 1 t baking soda
• ½ t salt
• + 7 more ingredients
• • 1 t xanthan gum
  • 1 t pumpkin pie spice
  • ½ t vanilla extract
  • ¹/₃ c shortening (for filling)
  • ¾ c confectioners' sugar (for filling)
  • 4 oz cream cheese (for filling)
  • ½ t vanilla extract (for filling)
