Quesadillas with Refried Beans, Cheese & Scallion Sour Cream

Ingredients

  • ¾ cup shredded Monterey Jack cheese
  • One 16-oz. can refried beans, heated gently on the stove
  • 1/3 cup crumbled feta cheese
  • ¼ cup sour cream
  • ¼ cup chopped fresh cilantro
  • 4 flour tortillas (about 9-½ inches in diameter)
  • 2 scallions, trimmed and thinly sliced
  • + 2 more ingredients
    • About ¼ cup red salsa; more for serving
    • Vegetable oil as needed
