Quick Corn Light Bread

Ingredients

  • 2 c corn meal-plain
  • ½ c flour-plain or all-purpose
  • ¾ c sugar
  • 1 t soda
  • 1 t salt
  • 1 t active dry yeast
  • 2 c buttermilk
  • + 1 more ingredients
    • 3 T Crisco-melted

Mix and sift first 5 ingredients. Mix lightly with all ingredients. Pour in greased loaf pan and bake at 375F about 55 minutes. Recipe reprinted with permission from Brooks Shaw and Sons The Old Country Store (Jackson, Tn., 1986).
