  • 2 Tbs. unsalted butter
  • ½ tsp. freshly ground black pepper
  • 1 tsp. ground coriander
  • ½ lb. Dolce Gorgonzola, trimmed of any rind and cut into small chunks
  • 2 Tbs. finely chopped shallots
  • ½ cup heavy cream
