Ingredients

  • 3 cups water
  • 2 tablespoons Calvados
  • 1 ½ tablespoons granulated sugar
  • ¼ teaspoon salt
  • 2 teaspoons fresh lemon juice
  • 1 large egg
  • 1 teaspoon sugar
  • + 10 more ingredients
    • 2/3 cup sugar
    • 4 3-inch-long strips of fresh lemon zest (1/2 inch wide)
    • ½ teaspoon vanilla
    • 2/3 cup whole milk
    • 2 large egg whites
    • 1 ½ pounds quince
    • Confectioners sugar
    • 5 tablespoons all-purpose flour
    • 1½ tablespoons unsalted butter
    • 1 ½ tablespoons unsalted butter

Whisk together all crpe ingredients until smooth, then chill, covered, 30 minutes. Combine water, sugar, zest, and a pinch of salt in a 3-quart heavy saucepan and cook over moderate heat, stirring, until sugar is dissolved.
