Quinoa and Onion Risotto with Crème Fraîche and Hazelnuts

Ingredients

  • 2 thyme sprigs
  • 1 ½ cups uncooked quinoa
  • 1 teaspoon salt
  • 6 cups water
  • 3 tablespoons crème fraîche
  • 1 bay leaf
  • 3 tablespoons chopped hazelnuts, toasted
  • + 3 more ingredients
    • 2 tablespoons white wine vinegar
    • 1 ½ cups finely chopped Oso Sweet or other sweet onion
    • 1 teaspoon butter

Place quinoa in a fine sieve; place sieve in a large bowl. Cover quinoa with water. Using your hands, rub grains together for 30 seconds; rinse and drain. Repeat procedure twice. Drain well.
