Quinoa Fruit Salad

Ingredients

  • 2 -3 tablespoons coarsely chopped toasted almonds
  • 2 medium scallions, white parts only thinly sliced
  • 2 medium firm-ripe avocados, pitted, peeled and cut into ½ inch chunks
  • ¼ teaspoon sweet paprika
  • ¼ teaspoon ground cumin
  • ¼ teaspoon ground coriander
  • 3 tablespoons extra-virgin olive oil
  • + 4 more ingredients
    • 1 large lemon
    • 1 cup quinoa, rinsed well
    • 2 tablespoons dried apricots
    • 3 tablespoons raisins
