Quinoa: Ginger-Pecan Muffins
Ingredients
- 1 large egg, lightly beaten
- ¼ teaspoon salt
- 2/3 cup fat-free milk
- ½ cup chopped dried apricots
- Cooking spray
- ¼ cup molasses
- ½ cup uncooked quinoa

- 1/3 cup sugar
