Quinoa: Ginger-Pecan Muffins

Ingredients

  • ½ cup uncooked quinoa
  • Cooking spray
  • ¼ cup molasses
  • 2/3 cup fat-free milk
  • ¼ teaspoon salt
  • ½ cup chopped dried apricots
  • 1 large egg, lightly beaten
  • + 5 more ingredients
    • 1 teaspoon ground ginger
    • 1/3 cup sugar
    • 1/3 cup chopped pecans, toasted
    • 2 cups reduced-fat Bisquick
    • 1 cup water

1. Preheat oven to 400°. 2. Rinse quinoa (to remove any bitterness). Combine 1 cup water and quinoa in a medium saucepan; bring to a boil.
