Quinoa Lentil Pilaf
Ingredients
- Olive oil spray
- 2 shallots, chopped fine
- ¼ teaspoon crushed red pepper (use ½ teaspoon if you like spicy)
- 1 dried bay leaf
- ½ teaspoon Pure Himalayan Salt
- 3 cloves garlic, minced
- 1 teaspoon fresh chopped thyme (or ¼ tsp dried)

- ¾ cups quinoa, rinsed
- 2 ¼ cups Vegetable broth
- ½ cup Beluga Lentils, rinsed
- 1 red onions, quartered and sliced thin
- 2 tablespoons balsamic vinegar
- ½ cup scallions
- ½ cup grated Carrots
- ¼ cup Fresh cilantro
- 1 tablespoon Seasoned Rice Vinegar
- 1 teaspoon fresh Ginger, minced
- 1 teaspoon Organic Maple Syrup
1. Heat a medium skillet to medium-high heat. Add shallots, crushed red pepper, bay leaf and salt. Cook for 5 minutes. Add garlic, quinoa and thyme and cook for about 3 more minutes.
