Quinoa Quiche


  • Chopped veggies of your choice: peppers, sun-dried tomatoes
  • one shallot, diced
  • handful chopped kale/spinach
  • four eggs
  • For the quiche:
  • ½ cup of grated parmesan cheese
  • 2 tablespoons sriracha sauce
  • + 2 more ingredients
    • 2 cups of quinoa, cooked & cooled
    • For the crust:

Preheat oven to 350 degrees. Cook the quinoa as you would usually do (I cook mine with broth instead of water) and set aside in a bowl to cool.
