Quinoa Quiche Muffins with Spinach and Cheese {Giveaway}

  • ½ cup quinoa
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 4 cups fresh spinach leaves
  • 2 garlic cloves, minced
