Quinoa Salad with Black Beans, Corn, and Tomatoes | Simply Recipes

Ingredients

  • 1 15-ounce can black beans, drained and rinsed
  • 1 cup uncooked quinoa, well rinsed
  • 3 Tbsp olive oil
  • ¼ cup chopped cilantro, including tender stems, packed
  • 1 jalapeño, seeded and finely chopped
  • 3 medium tomatoes, seeded and cut into chunks
  • 2 Tbsp lime juice
  • + 3 more ingredients
    • 1/3 cup diced red onion
    • 2 cups water
    • ½ teaspoon salt

Method 1 Put the rinsed quinoa, salt and water into a pot and bring it to a boil. Cover and simmer gently until the quinoa absorbs all the water, about 10-15 minutes.
