Quinoa Salad with Dried Cherries and Pistachios


  • Freshly ground pepper, to taste
  • ¼ tsp. sea salt
  • 3 Tbs. chopped fresh flat-leaf parsley
  • 2 Tbs. extra-virgin olive oil
  • ¼ cup balsamic vinegar
  • ½ head radicchio, cored and thinly sliced
  • 2 cups water
  • + 3 more ingredients
    • 1 cup quinoa
    • ¼ cup chopped pistachios
    • ¼ cup dried tart cherries

Put the quinoa in a fine-mesh strainer and rinse well under cold water. In a saucepan over high heat, bring the 2 cups water to a boil. Add the quinoa and reduce the heat to low.
