Quinoa with Black Beans and Cilantro

Ingredients

  • 1 cup quinoa
  • 1½ cups water
  • Crumbled Cotija cheese or feta cheese
  • 1 cup red bell pepper
  • 2 cups white onions
  • 1 tablespoon vegetable oil
  • ½ cup fresh cilantro

    • 1 15-ounce can black beans
    • ½ teaspoon ground cumin
    • ½ teaspoon salt
    • 2 teaspoons chili powder
