Quinoa with Grilled Zucchini, Garbanzo Beans, and Cumin

Ingredients

  • 1 15-ounce can garbanzo beans (chickpeas)
  • 1 teaspoon turmeric
  • 2 garlic cloves
  • 5 tablespoons extra-virgin olive oil
  • 2 teaspoons cumin seeds
  • 3 tablespoons fresh lemon juice
  • ¼ cup fresh flat-leaf parsley
  • + 7 more ingredients
    • 4 green onions
    • 1 ½ teaspoons ground cumin
    • 1 ½ pounds medium zucchini
    • 1 teaspoon coarse kosher salt
    • 2 cups water
    • 1 teaspoon smoked paprika
    • 1 cup quinoa

Combine garbanzo beans and lemon juice in large bowl. Add 3 tablespoons oil; press in garlic and stir to combine. Let marinate at least 15 minutes and up to 2 hours.
