Ingredients

  • 1 cup uncooked quinoa
  • 2 cups water or
  • 6 to 8 sun-dried tomatoes
  • 2 tablespoons butter or olive oil
  • 2 shallots, finely chopped
  • 2 cloves garlic, minced or crushed
  • 1 jalapeño, seeded and finely chopped
  • + 8 more ingredients
    • ½ cup fresh or frozen corn
    • ½ teaspoon ground cumin
    • ½ teaspoon ground coriander
    • ¼ teaspoon cayenne
    • ½ teaspoon sea salt
    • ¼ teaspoon fresh ground black pepper
    • small handful of fresh parsley, chopped
    • 2 to 3 tablespoons fresh grated Parmesan cheese (optional)

Rinse the quinoa and soak for 8 hours or overnight in 2 cups of water or vegetable stock.
