Rack of Lamb with Garlic-Herb Crust

Ingredients

  • 2 tablespoons mayonnaise
  • ¼ cup minced fresh flat-leaf parsley
  • 2 (8-rib) lamb rib roasts (1 1/2 pounds each), frenched
  • Garnish: fresh rosemary
  • 4 large garlic cloves, minced
  • ½ teaspoon pepper
  • ½ cup fresh breadcrumbs
  • + 6 more ingredients

    • ½ teaspoon salt
    • 2 tablespoons vegetable oil
    • 2 tablespoons Dijon mustard
    • 1 tablespoon minced fresh rosemary

Pat lamb dry with paper towels; season with 1 tsp. salt and 1/2 tsp. pepper. Heat oil in a large skillet over high heat. Cook lamb in hot oil 3 to 4 minutes on each side or until browned.
