Radicchio Caesar Salad

Ingredients

• ¼ teaspoon Coarsely ground black pepper
• 2 cup plain croutons
• 2 tablespoon grated Parmigiano Reggiano cheese
• 3 heads radicchio (about 1 1/2 pounds), cored, washed and torn into bite-sized pieces
• Salad:
• ½ teaspoon coarsely ground black pepper
• ½ teaspoon sugar

• • 1 garlic, minced
  • 2 teaspoon anchovy paste
  • 4 teaspoon fresh lemon juice
  • 2 tablespoon mayonnaise
  • 2 tablespoon red wine vinegar
  • 6 tablespoon extra-virgin olive oil
  • Dressing:

To prepare dressing, combine all ingredients in a jar; cover tightly and shake vigorously. Refrigerate until ready to use. (The dressing can be made up to 1 day in advance.)
