Radicchio, Grapefruit and Spinach Salad

  • 1 10-ounce head radicchio
  • ½ cup Kalamata olives or other brine-cured black olives
  • 1 teaspoon fennel seeds
  • 8 ounces baby spinach leaves
  • 2 white grapefruits
  • ½ cup olive oil
  • 5 tablespoons red wine vinegar

Combine vinegar and fennel seeds in medium bowl. Gradually whisk in oil. Season dressing with salt and pepper. Cut all peel and white pith from grapefruits.
