Raspberry-Almond Jam

  • 2 cups sugar
  • ¼ teaspoon almond extract
  • ½ cup amaretto (almond-flavored liqueur)
  • 5 cups fresh raspberries
  • ¼ teaspoon salt
  • 2 tablespoons fresh lime juice

Combine first 4 ingredients in a large saucepan; bring to a boil. Reduce heat, and simmer, uncovered, 40 minutes or until thick, stirring frequently. Remove from heat; stir in salt and extract.
