Ingredients

  • ½ cup granulated sugar, plus 1 tablespoon for the crust
  • 1 Tbs. heavy cream
  • 6 cups fresh raspberries
  • 5 Tbs. sour cream
  • 2 Tbs. cornstarch
  • 1 large egg yolk
  • 5-¼ oz. (1 cup plus 3 tablespoons) all-purpose flour
  • + 6 more ingredients
    • 1/8 tsp. rose water (optional
    • ¼ cup finely ground cornmeal
    • ½ tsp. kosher salt
    • 1 Tbs. turbinado sugar or 2 tsp. granulated sugar
    • 4 oz. (½ cup) unsalted butter, cut into small cubes and chilled
    • ½ tsp. ground cinnamon

Combine the flour, cornmeal, salt, and 1 tablespoon of the sugar in a food processor; pulse briefly to combine. Add the butter; pulse until the mixture is the texture of coarse meal.
