Raspberry Jam Logs

Ingredients

  • 1 egg, beaten
  • 1 teaspoon milk
  • 1 (7-ounce) can flaked coconut
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/3 cup raspberry jam
  • ½ cup butter or margarine, melted and slightly cooled

    • 1 cup all-purpose flour
    • 1 egg, beaten
    • 1 cup sugar
    • ¼ cup butter or margarine, softened

Combine flour and baking powder in a medium mixing bowl; gradually stir in 1/2 cup melted butter, mixing well. Stir in 1 egg and milk. Press mixture into a greased 12- x 8- x 2-inch baking dish.
