Ingredients

  • Cake:
  • 2/3 cup all-purpose flour
  • 1 tablespoon amaretto (almond-flavored liqueur)
  • Cooking spray
  • 1/8 teaspoon salt
  • ¼ cup powdered sugar, divided
  • ½ teaspoon grated lemon rind

    • 1 (15-ounce) can apricot halves in light syrup, undrained
    • 1 teaspoon baking powder
    • 1 ½ teaspoons vanilla extract
    • 1 (10-ounce) bottle seedless raspberry jam
    • 4 large eggs
    • ¾ cup granulated sugar
    • ¼ teaspoon almond extract
    • 1 tablespoon honey
    • 2 cups fresh raspberries

Preheat oven to 400°. To prepare cake, coat a 15 x 10-inch jelly roll pan with cooking spray, and line with wax paper. Coat paper with cooking spray; set aside.
