Ingredients

  • 2 pounds eggplant
  • 2 large onions (1 1/2 lb total)
  • 2 ¼ teaspoons salt
  • 20 fresh basil leaves
  • 8 large garlic cloves
  • Parmigiano-Reggiano shavings
  • 1 cup fresh flat-leaf parsley
  • + 6 more ingredients
    • 2 ½ pounds tomatoes (4 large)
    • fresh basil
    • ½ teaspoon black pepper
    • 4 medium zucchini (2 lb)
    • 18 tablespoons extra-virgin olive oil
    • 3 assorted bell peppers (green, red, and/or yellow; 1 1/2 lb total)

Cut an X in bottom of each tomato with a sharp paring knife and blanch together in a 4-quart pot of boiling water 1 minute.
