Ratatouille 15


  • 1 onion, chopped (large)
  • 1 green pepper, chopped or diced
  • ½ cup(s) carrots, cut into small pieces
  • 1 - 2 cup squash (zucchini, tomatoes or any fresh vegetable)
  • Parmesan cheese

Sauté onions and green pepper in oil. Add carrots and other vegetables. Cover and simmer 30 minutes to one hour. Sprinkle with cheese. Turn off heat. Cover and let stand until cheese is gooey.
