Ingredients

  • 1 onion, finely chopped
  • 1 tablespoon(s) olive oil
  • 2 clove(s) garlic, minced
  • 1 zucchini, diced (large)
  • 1 tomato, diced
  • ½ teaspoon(s) cumin
  • 1 teaspoon(s) Salt

    • Shredded cheddar cheese
    • Red Bell Pepper, diced
    • 1 can(s) corn, drained (8 ounce can)

Sauté onion until it begins to brown. Add garlic and stir one minute until fragrant. Do not allow garlic to brown. Add zucchini, bell pepper and corn. Stir, cover and cook for about 10 minutes.
