Raw, Vegan Strawberry Vanilla Cheesecake


  • 1 ½ cup raw almonds
  • Pinch sea salt
  • 2 cups pitted medjool dates
  • 3 cups cashews
  • ¼ teaspoon sea salt
  • 2/3 cups melted coconut oil
  • 1 vanilla bean, cut in half, seeds scraped out for use, or 2 teaspoons vanilla extract
  • + 3 more ingredients
    • 3 tablespoons lemon juice
    • ½ cup agave nectar
    • 1 cup strawberries

Soak the cashews in water overnight or for three or more hours. Drain them of water and set aside. Place the almonds and sea salt in a food processor and grind roughly.
