Recipe: Gail Simmons’ Pear Tart (Cake)
Ingredients
- ½ cup (1 stick) softened, unsalted butter, plus more for greasing pan
- 1 cup plus 2 tablespoons sugar
- 2 eggs
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1 teaspoon vanilla extract
- ½ teaspoon freshly ground nutmeg (this is my addition)

- 1 pound pears (Concorde or Anjou), (I used 1 ½ pounds pears)
- Juice of ½ lemon, divided (I used a Meyer lemon)
