RECIPE: Paper Thin Green Herb Omelettes: Flourless Gluten Free Crepes

Ingredients

  • 1 or 2 ounces fresh goat cheese, crumbled
  • Lightly dressed salad greens of your choice
  • Butter for pan
  • Freshly ground black pepper
  • Pinch fine sea salt
  • 1 small handful of baby spinach, washed
  • A few fresh herbs such as chives, flat leaf parsley, tarragon and chervil
  • + 2 more ingredients
    • 2 Tablespoons heavy cream or coconut milk
    • 2 large (preferably organic, free range, omega 3) eggs
