Recipe: Pumpkin Cupcakes with Cream Cheese Frosting

Ingredients

  • ¼ cup butter (½ stick), softened
  • ½ cup sugar
  • 1 egg
  • ¾ cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 ½ cups unbleached all-purpose flour
  • 2 teaspoons baking powder
