Red Kidney Beans (Rajma)

Ingredients

  • 6 sprigs cilantro, minced
  • water
  • salt to taste
  • 1 (15 ounce) can kidney beans, drained
  • 1 teaspoon powdered red pepper or dried Cajun pepper (optional)
  • 2 tablespoons minced fresh ginger root
  • 4 cloves garlic, minced
  • + 8 more ingredients
    • 6 roma (plum) tomatoes, chopped
    • 2 onion, chopped
    • 1 whole cardamom pod (optional)
    • 1 bay leaf
    • 1 (1 inch) piece cinnamon stick
    • 10 black peppercorns
    • 5 whole cloves
    • 3 tablespoons canola oil

1. Heat oil in a large saucepan over a medium heat. Stir in the cloves, whole black peppercorn, cinnamon, cardamom and bay leaf.
