Ingredients

  • 3 cups finely shredded red cabbage
  • 1 cup shredded carrot
  • 2 tablespoons cider vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon Dijon mustard
  • ½ teaspoon salt
  • 1 tablespoon sugar

Combine first 5 ingredients in a large bowl; stir with a whisk. Stir in cabbage and carrot. Let mixture stand 5 minutes.
