Ingredients

  • 1 red bell pepper
  • 1 (19-ounce) can chickpeas (garbanzo beans), rinsed and drained
  • ¼ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 garlic clove, quartered
  • 2 ½ tablespoons fresh lemon juice
  • ¼ teaspoon ground cumin

    • 1 tablespoon tahini (sesame seed paste)

Preheat broiler. Cut bell pepper in half lengthwise; discard seeds and membranes. Place pepper halves, skin sides up, on a foil-lined baking sheet; flatten with hand.
