Red Velvet Ice Cream Sandwiches

Ingredients

• 1 ½ pints softened ice cream or frozen yogurt
• ½ tsp red gel coloring
• 1 egg
• ¾ cup sugar
• 1 tsp vanilla
• 6 Tbsp unsalted butter, room temperature
• pinch salt

  • 2 Tbsp cocoa powder
  • 1 ½ cup all-purpose flour, plus more for dusting work area
