Red, White & Blue Quinoa Fruit Salad with Vanilla Honey Vinaigrette

Ingredients

  • FOR THE QUINOA FRUIT SALAD:
  • 1 cup Uncooked Quinoa
  • ½ cups Water
  • 1 cup Low Fat Milk
  • 1 Tablespoon Brown Sugar
  • 1-½ cup Strawberries, Sliced
  • 1 cup Blueberries
  • + 16 more ingredients
    • 1-½ cup White Peaches, Sliced
    • ½ cups Candied Flaxseed Almonds (recipe Below)
    • FOR THE DRESSING:
    • ¾ teaspoons Vanilla Extract
    • ¼ cups White Balsamic Vinegar
    • ⅛ cups Grapeseed Oil
    • 1 Tablespoon Honey
    • FOR THE CANDIED ALMONDS:
    • ¾ cups Granulated Sugar
    • 1 teaspoon Ground Cinnamon
    • 2 Tablespoons Ground Flaxseed
    • 1-¼ teaspoon Sea Salt
    • 1 whole Egg White
    • 1 teaspoon Vanilla Extract
    • 1 Tablespoon Water
    • 2 cups Raw Almonds

For the sweet quinoa fruit salad: In a medium pan,over high heat, add uncooked quinoa, water, and milk, and bring to a rolling boil.
