Red, White & Blue Quinoa Fruit Salad with Vanilla Honey Vinaigrette
Ingredients
- FOR THE QUINOA FRUIT SALAD:
- 1 cup Uncooked Quinoa
- ½ cups Water
- 1 cup Low Fat Milk
- 1 Tablespoon Brown Sugar
- 1-½ cup Strawberries, Sliced
- 1 cup Blueberries

- 1-½ cup White Peaches, Sliced
- ½ cups Candied Flaxseed Almonds (recipe Below)
- FOR THE DRESSING:
- ¾ teaspoons Vanilla Extract
- ¼ cups White Balsamic Vinegar
- ⅛ cups Grapeseed Oil
- 1 Tablespoon Honey
- FOR THE CANDIED ALMONDS:
- ¾ cups Granulated Sugar
- 1 teaspoon Ground Cinnamon
- 2 Tablespoons Ground Flaxseed
- 1-¼ teaspoon Sea Salt
- 1 whole Egg White
- 1 teaspoon Vanilla Extract
- 1 Tablespoon Water
- 2 cups Raw Almonds
For the sweet quinoa fruit salad: In a medium pan,over high heat, add uncooked quinoa, water, and milk, and bring to a rolling boil. Lower heat and let simmer for about 12-15 minutes, or until water is evaporated. Add the brown sugar and allow to cool to room temperature before adding the berries...
