Red Wine and Pear Brioche Tart

Ingredients

  • 2 tablespoons whole milk
  • 2 large eggs
  • 6 tablespoons chilled unsalted butter, cut into ½-inch cubes
  • ¾ teaspoon salt
  • 2 teaspoons dry yeast
  • 3 tablespoons sugar
  • 1 ½cups all purpose flour
  • + 6 more ingredients
    • crème fraîche or sour cream
    • 1 teaspoon water
    • 1 teaspoon cornstarch
    • 1 ¼ pounds Bosc pears (3 medium), peeled, quartered, cored, each quarter cut into 3 wedges
    • ¾ cup plus 2 tablespoons sugar
    • 1 ¾ cups dry red wine
