- 3 tablespoons sugar
- 2 teaspoons dry yeast
- ¾ teaspoon salt
- 6 tablespoons chilled unsalted butter, cut into ½-inch cubes
- 2 large eggs
- 2 tablespoons whole milk

- 1 ¼ pounds Bosc pears (3 medium), peeled, quartered, cored, each quarter cut into 3 wedges
