Ingredients

  • 1 ½ tablespoons sugar
  • 10 whole black peppercorns
  • 1 3-pounds red cabbage
  • 1 ½ pounds red onions
  • 2 cups dry red wine
  • 6 tablespoons unsalted butter
  • 2 cups water
  • + 8 more ingredients
    • 1 ¼ teaspoons salt
    • 1 Turkish bay leaf
    • ¼ cup red-wine vinegar
    • 1 6-inch square of cheesecloth
    • 2 whole cloves
    • 1 firm sweet apple, such as Honey Crisp, Gala, or Fuji
