Ingredients

  • 1 ½ cups quartered button mushrooms
  • 1/3 cup dried porcini mushrooms (about 1/2 ounce)
  • ¼ teaspoon salt
  • 1 cup diced celery
  • 1 bay leaf
  • 1 tablespoon butter
  • 1 tablespoon olive oil

    • 4 cups boiling water
    • 3 tablespoons tomato paste
    • 2 cups diced carrot
    • 2 thyme sprigs
    • 4 garlic cloves, minced
    • 1 tablespoon low-sodium soy sauce
    • 2 cups Merlot or other dry red wine
    • 1 cup diced onion
    • 2 tablespoons all-purpose flour
    • 1 cup chopped red bell pepper
    • 1/8 teaspoon black pepper
