Rhubarb, Pear, and Apple Compote

  • 2 cups (1-inch-thick) slices rhubarb (about 1/2 pound)
  • 1 cup cubed peeled Bartlett pear
  • ½ cup sugar
  • 1 teaspoon grated orange rind
  • ¼ cup fresh orange juice
  • 1 (3-inch) cinnamon stick
  • 1 cup cubed peeled Gala apple

Combine first 5 ingredients in a medium saucepan; bring to a boil over medium-high heat. Reduce heat, and simmer 3 minutes. Add apple, and cook 2 minutes.
