Ingredients

    • ¾ cup all purpose flour
    • 5 cups rhubarb
    • 9 tablespoons unsalted butter
    • ¾ cup golden brown sugar
    • 4 tablespoons cream

Blend flour, sugar, and salt in processor 5 seconds. Using on/off turns, cut in butter until coarse meal forms. Add egg yolk and 3 tablespoons cream.
