  • 2 4-inch strips lemon zest
  • ½ cup whole almonds with skins toasted
  • 1 cup orzo
  • 4 tablespoons unsalted butter
  • 1 3- to 4-inch cinnamon stick
  • 1 ½ cups long-grain white rice
  • 1 Turkish bay leaf or 1/2 California
  • + 1 more ingredients
    • 5 ½ cups water

Melt butter in a 4- to 5-quart heavy pot over medium heat and stir in orzo. Cook, stirring frequently, until orzo is golden, about 5 minutes.
