Rice noodles with chilli, garlic and wild mushrooms


  • 1 tbsp vegetable oil
  • 55g/2oz assorted wild mushrooms
  • 2 garlic cloves, chopped
  • 1 pinch chilli flakes
  • 2 tbsp soy sauce
  • 85g/3oz rice noodles, cooked according to packet instructions, drained2 tbsp chopped fresh coriander
  • chopped fresh chives, to garnish

1. Heat the oil in a pan and fry the mushrooms, garlic and chilli flakes for 4-5 minutes, or until the mushrooms are golden-brown, then stir in the soy sauce, noodles and coriander.
