Rice Noodles with Miso Dressing

Ingredients

  • 3 tbsp miso (such as minute miso)
  • 3 tbsp rice wine vinegar
  • 2 tbsp sunflower oil
  • 1 tbsp honey
  • 2 dried piri-piri peppers
  • 1-6oz package rice noodles
  • 3 medium carrots
  • + 4 more ingredients
    • 8 oz mushrooms
    • 1 package shelled edamame
    • 2 cloves garlic crushed
    • kosher salt to taste
